Ruben Sarfati is the youngest French chef to have taken part in Un dîner presque parfait (winner in 2016) and Top Chef (in 2012, at the age of 18, where he lasted 4 weeks). He came 2nd in the French amateur cooking championship. 

After an initial two years’ experience running a restaurant, this young chef embarked on a host of projects: catering, home chef, etc. 

Since 2017, he has been one of the partner chefs at Villas Raphaël, offering our guests refined, hearty dishes throughout their stay. 

Today, he reveals his his exclusive cheesecake recipe. 

For a cake 22/24 cm in diameter (about 10 people)

Preparation time: 25 minutes
Cooking time: 1 hour
Rest: 1 hour

Ingredients

Base / Biscuit :

  • 190 g flour
  • 40 g almond powder
  • 150 g butter
  • 3 g bicarbonate
  • 60 g brown sugar
  • 2 egg yolks
  • 1 tablespoon vanilla extract
  • 1 pinch flower of salt

Preparation :

  • 3 eggs
  • 500 g Greek yoghurt
  • 300 g cream cheese (e.g. Samson)
  • 150 g single cream
  • 150 g sugar
  • 30 g flour
  • 80 g passion fruit juice

Course

Biscuit :

  1. Mix all the ingredients until you obtain a smooth dough.
  2. Spread the dough on a baking tray lined with baking parchment and bake at 180°C for 15 minutes.
  3. Once cooked, crumble the dough and press it into the bottom of a pastry ring.
  4. Leave to cool.

Pastry case :

  1. Separate the egg yolks from the egg whites.
  2. Whisk the egg whites until stiff, adding the sugar towards the end.
  3. In another bowl, whisk the egg yolks with the yoghurt, cheese and flour. Mix well, then add the passion fruit juice and cream.
  4. Gently fold the egg whites into the cheese mixture using a pastry blender.
  5. Pour the mixture over the cooled pastry base.
  6. Bake at 135°C for 40 minutes with a bowl of water at the bottom of the oven.
  7. At the end of this time, turn off the oven and leave to cool for 1 hour, before chilling for at least 1 hour.
  8. Decorate the cake with a red fruit coulis and some fresh fruit!
